Instructions: In a medium-size bowl, beat egg yolks, 2/3 cup sour cream, lemon juice, lemon zest and salt until well mixed. In a large bowl, beat egg whites until stiff.
Fold into yolks. Preheat broiler. Melt butter in an 8 inch omelet pan over low heat. Pour in egg mixture and cook, loosening edges, until lightly browned underneath. Broil briefly until top is lightly browned. Sprinkle with sugar. Cut omelet into quarters. Top each with a tablespoon of jam and a dollop of sour cream. Serves 4 Email this Recipe:
