3 lb monkfish fillets (1.3kg)
1/2 cup olive oil (125ml)
1/4 cup tarragon vinegar (60ml)
2 tsp Worcestershire sauce (10ml)
1/2 tsp ground ginger (3ml)
1 tbl brown sugar (15ml)
2 tbl sherry (30ml)
3 tbl soy sauce (45ml)
Instructions:
Instructions: Arrange the fish in a shallow baking pan. Combine the remaining ingredients together to form a marinade, pour the marinade over the fish. Marinate, covered, and refrigerated for 1 hour. Drain, reserving the marinade.

Grill the fish over medium coals for 10 minutes, brushing with the marinade. Place on a serving platter, brush one final time with marinade before serving.
