Ingredients:
Amount Ingredient
1 lb Lean ground beef
1 sm Onion, thinly sliced
2 tsp Minced fresh ginger
1 pkt 16 oz frozen mixed veggies (snap peas, carrots, water chestnuts, pineapple and red pepper)
6 tbl Bottled sweet and sour sauce OR sauce from frozen mixed vegetables, 6-8 T
Instructions:
Instructions: Place meat, onion and ginger in large skillet; cook over high heat 6 to 8 minutes or until no longer pink, breaking meat apart with wooden spoon.

Pour off drippings.

Stir in frozen vegetables and sauce. Cook, covered, 6 to 8 minutes or until vegetables are heated through. Serve over rice.

Prep and cook time: 15 minutes

Serving suggestion: Serve with sliced Asian apple-pears.

NOTE: To mince ginger, peel it with a vegetable peeler and chop it with a paring knife until the ginger is in uniform fine pieces.
