Instructions: Heat oven to 400iF. Brush bottom of 10x15" jelly roll pan with oil. Spread mixed nuts evenly on pan. Bake for 5 minutes, stirring frequently. Remove from oven; drizzle with honey, tossing to coat. Sprinkle with Cajun seasoning and continue baking 5-7 minutes or until crisp, stirring once. Transfer to a clean jelly roll pan to cool. Store in an airtight container.

Yield: 2 1/2 cups

NOTES : An alternative to plain mixed nuts, these are an excellent host or hostess gift. Just be sure the container you present them in is airtight.
