Oil for deep-frying
An egg
100 gm Self-raising flour
1 tsp Baking powder
3 x Cobs of sweetcorn, stripped of kernels
1 tbl Fresh thyme leaves
Instructions:
Instructions: 1 Heat the oil for deep-frying in a heavy-based saucepan. Crack the egg into a bowl, and mix in the flour and baking powder together to form a batter.

2 Combine the corn kernels with the thyme leaves and add to the batter.

Deep-fry heaped spoonfuls of batter in the oil until golden. Drain well on kitchen paper. Serve with plantain salad.
