Instructions: 1 Preheat the oven to 220c/425f/Gas 7. Beat the eggs in a small bowl and add the sweetcorn, chives, flour, milk and seasoning.
2 Mix to a thick, smooth batter. Put a drop of oil in each muffin case and pour the batter in to 3/4 fill each one. Bake in the oven for 8-10 minutes until risen and golden. 3 Serve topped with crispy bacon (bacon off-cuts deep fried or grilled until very crisp), tomato sauce, a drizzle of oil and a sprig of dill.
