4 x swordfish steaks, 1" thk - (abt 2 lbs) fresh or frozen
2 tbl cooking oil
1/4 tsp salt
1/8 tsp freshly-ground black pepper
----------------- RED PEPPER SAUCE ----------------
1 lrg sweet red pepper roasted, peeled,
and seeded
(or 1/2 cup canned roasted red peppers)
4 x green onions sliced
1 x garlic clove halved
2 tbl cooking oil
2 tsp Dijon-style mustard
1 tsp honey
3/4 cup snipped fresh basil
(or 1/4 tspn dried basil, crushed)
1/8 tsp salt
Instructions:
Instructions: Thaw fish, if frozen. Brush both sides of fish steaks with oil and sprinkle with salt and pepper. Lightly grease cooking grill. Place fish on the cooking grill. Grill 10 to 12 minutes or until fish flakes when tested with a fork, turning once halfway through grilling time.

Prepare Red Pepper Sauce and heat in saucepan. Spoon over grilled fish.

Red Pepper Sauce: Coarsely chop red pepper; set aside. In a skillet cook onions and garlic in oil until tender. Remove from heat; cool slightly. In a blender container or food processor bowl combine red pepper, onion mixture, mustard, honey, basil, salt, and black pepper. Cover; blend or process until smooth.

Serve warm over grilled fish, chicken, or pork. Store, covered, in refrigerator up to 1 week. (Makes 1/2 cup for eight 1-tablespoon servings)
