4 x Swordfish steaks, 1-inch thick
4 x Cloves slivered garlic
4 tbl Olive oil
1/2 x Lime, juiced
1/2 tbl Soy sauce
1 x Green onion, thinly sliced
----------------- FRUIT SALSA ----------------
1/2 x Ripe mango, chopped and drained
1/4 x Red onion, chopped
1 tsp Fresh minced parsley
1/4 x Red or green sweet pepper, chopped
1 x Lime, juice of
Instructions:
Instructions: Lightly score the swordfish, rub it with garlic, leaving garlic on the fish. Marinate the fish in the remaining ingredients for 2 to 3 hours at room temperature. Grill over medium coals for 5 minutes a side until medium rare, grill longer for well done. Serve with Fruit Salsa.

Fruit Salsa: Fruit salsa brings out all the wonderful flavors of summer.

This is a great garnish and flavor builder for grilled fish or chicken.

Serves 2 to 4 as a garnish depending on the portions used. Mix all ingredients together and chill at least one hour before serving.
