4 x swordfish steaks - (8 to 10 oz ea)
1 cup diced fresh tomatoes
1 tsp red wine vinegar
1 tbl vegetable oil
1 tbl chopped fresh basil
1/2 tsp minced fresh garlic
1/2 tsp salt
Instructions:
Instructions: Cook fish on a well-oiled grill 4 to 5 minutes each side.

Mix remaining ingredients. Heat in a sauce pan over low or microwave until all ingredients are warmed through. Do not cook tomato mixture or else it will become mushy and lose its fresh flavor.

This recipe yields 4 servings.

Suggested Wine: Beverage suggestion: Amber Ale or White Grenache.

NOTES : Chefs Tip - A wild rice mixture will be excellent with this dish. For a different edge try cilantro instead of basil.
