1/2 cup uncooked bulgur wheat
3 cup water
1/2 tsp salt
1/4 x to 1/2 cup fresh or frozen green peas
2 lrg tomatoes, chopped
3 tbl safflower oil
1 tsp salt
1/2 tsp pepper
2 x garlic cloves
1 bn green onions and tops, finely chopped
1/2 cup parsley, chopped
Juice of at least 2 lemons
a cup diced celery
a cup diced radishes
a cup diced cucumber
Instructions:
Instructions: Bring water to a boil with salt. Add bulgur wheat, remove from heat, cover and let stand 1 hour.

Drain well and add the remaining ingredients. Blend well and chill for 2 hours.

Serve on romaine or red leaf lettuce.
