Ingredients:

2 cup cracked wheat (burghul)
1 tsp salt
1/2 cup parsley, chopped
1/4 cup mint, chopped
1/2 cup spring onions
2 x tomatoes
3/4 cup lemon juice
1 cup olive oil
Instructions:
Instructions: Put the cracked wheat and salt in a large earthenware casserole with a lid, cover with boiling water and put the lid on while you prepare the other ingredients, leave covered for 3/4 of an hour.

Dice tomatoes and spring onions.

Drain off water from wheat and toss the wheat with the other ingredients. Leave it to marinate for an hour.

This is especially good with lamb or other grilled meat.
