1 cup Bulgur wheat
2 cup Water, boiling
2 x Tomatoes, seeded, finely diced
1 bn Scallions, sliced
3 tsp Fresh mint leaves, chopped
2 cup Fresh parsley, finely chopped
1/2 cup Lemon juice
1/4 cup Olive Oil

Servings: 8 as a side dish

1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally).

2. Drain well in a fine strainer.

3. Return bulgur to the bowl and add all other ingredients; mix well.

4. Chill for 2 hours.
