Ingredients:
Amount Ingredient
4 lrg Shallots -- chopped
1/4 cup Butter or margarine
1/2 cup Cherry tomato wedges
1/2 cup Prosicutto or ham strips
1 x Egg
3/4 cup Crumbled Gorgonzola cheese
Or Parmesan
2 tbl Light cream or milk
Salt and pepper -- to taste
8 oz Pkg
Noodles -- cooked/drained
2 tbl Chopped parsley
Instructions:
Instructions: In saucepan, cook shallots in butter until tender. Add tomato wedges and prosicutto. In a separate bowl, mix egg, cheese, cream or milk, salt, and pepper. Toss to blend and cook for just a minute. In hot serving dish, combine Tagliatelle and cheese mixture. Toss to blend. Serve immediately, garnished with parsley. I have substituted zucchini for the ham with good results and also added zucchini to the original.
