6 oz Smoked bacon or pancetta, diced
4 tbl Olive oil
6 oz Fresh shiitake mushrooms, sliced
1 lb Asparagus, cut into 2 inch pieces
12 oz Fresh Tagliatelle
1 tbl Fresh thyme, finely chopped
2 tbl Fresh oregano, finely chopped
Salt to taste

Servings: 6

1. Saute bacon in skillet until crisp, remove to a plate.

2. Drain off excess fat, then add olive oil to the skillet and cook the mushrooms until softened.

3. Lightly blanch the asparagus.

4. Cook the pasta briefly in boiling salted water.

5. Drain the noodles and toss with the asparagus, bacon, shiitake and fresh herbs.

6. Season with salt and pepper.
