Instructions: NOTE: Recipe adjusted to lower the fat content. Original recipe called for 2 t olive oil and 1/2 C half and half or soy milk.
Rinse mushrooms. Soak them in hot water to cover for 20 min. Remove from water. Rinse again. Cut off stems. Slice. Set aside. Heat oil in a heavy skillet and saute garlic and shallots for a few min. Add mushrooms and saute 15 min, until juice flows from mushrooms. Add saki or sherry, soy milk, and pepper and bring to a simmer for about 10 min until al dente. Drain and place in a warm bowl.
