Instructions: Put the tahina garlic and juice of half a lemon in a bowl.
Beat in cold water a generous splash at a time. The tahina will seize up at first but relaxes again as more water is added. Beat to a smooth slightly runny cream thin enough to dip into though not so thin that it all drips off again. Season with salt and a shake of cumin. Add more lemon juice if the taste needs a lift though it shouldnt be sharp. Just before serving drizzle over a little olive oil sprinkle with parsley and dust lightly with cayenne. To serve: Warmed pitta bread A selection of crudites: sticks of celery strips of red and green pepper carrot cucumber etc Serves 6 notes: Tahina a thick paste made of sesame seeds is sold in some supermarkets and many wholefood shops as well as Greek Turkish or middle Eastern food stores.
