Ingredients:

2 cup shredded cooked chicken warmed
1 cup packaged crisp chow mein noodles
1/4 cup thinly-sliced green onions
1/4 cup soy sauce
2 tbl toasted sesame oil
2 tbl rice vinegar
2 tbl water
2 tsp sugar
2 tsp grated fresh ginger root
1 sm red or green jalapeno pepper seeded, and
finely chopped - (1 tbspn)
Instructions:
Instructions: In a large mixing bowl combine the chicken, chow mein noodles, and green onions.

In a small saucepan stir together soy sauce, sesame oil, vinegar, water, sugar, gingerroot, and jalapeno pepper. Bring to boiling, stirring to dissolve the sugar. Remove from heat and pour over the chicken mixture. Toss to mix. Serve atop mixed salad greens.

This recipe yields 4 servings.

Comments: You could add about a half cup of wine or dry sherry to the poaching liquid or to the microwave dish when cooking the chicken to add flavor and help keep the meat moist.
