Instructions: Spray a cookie sheet with Pam. In a bowl combine the onion, zuke, garlic, basil, oregano, salt and pepper. Coat with the vinegar and italien dressing. Bake in a preheated 450 degree oven for about 10 minutes. Stir around vegies return to oven for about 5 minutes. Remove from oven and mash the roasted garlic and blend with onion and zuke. Add the tomato slices and stir to distribute. Place the veggie mixture over a prebaked pizza shell.
Add hot peppers evenly if desired and top with a shake of parmesan cheese. Bake in oven (400 degrees) for about 8 minutes or until desired crispness. I am sorry, but I dont have the nutritional info for this, but it is very lowfat. A good addition would be olives and feta cheese if you dont mind the extra fat and calories. This was exceptionally good and easy. I am a HUGE pizza lover and was surprised that I really loved this type of pizza. I hope you like it.
