3 lb beef chuck, cut into 1 1/2 inch cubes
1/2 tsp salt
1/2 tsp pepper
2 tbl olive oil
1 lrg onion, chopped
1/2 tsp ground turmeric
1/2 tsp ground cumin
1/2 tsp paprika
3 x plum tomatoes, peeled, seeded and chopped
1/2 cup reduced-sodium beef broth
1/2 lb sweet potatoes, peeled and cut into 1 inch pieces
2 tbl chopped fresh cilantro
Instructions:
Instructions: Season beef with salt and pepper. In large flameproof casserole, heat oil over high heat. Add beef in 2 batches, and cook for about 5 minutes per batch, or until browned, turning occasionally. Return all beef to pan; add onion, turmeric, cumin, paprika, tomatoes and broth; bring to boil. Reduce heat to low.

Cover and cook about 1 1/2 hours, or until beef is very tender.

Stir in sweet potatoes and simmer for 30 minutes, or until softened. Stir in cilantro and parsley just before serving
