Instructions: Season beef with salt and pepper. In large flameproof casserole, heat oil over high heat. Add beef in 2 batches, and cook for about 5 minutes per batch, or until browned, turning occasionally. Return all beef to pan; add onion, turmeric, cumin, paprika, tomatoes and broth; bring to boil. Reduce heat to low.
Cover and cook about 1 1/2 hours, or until beef is very tender. Stir in sweet potatoes and simmer for 30 minutes, or until softened. Stir in cilantro and parsley just before serving Email this Recipe:
