1 lb Small mushrooms, stalks trimmed
1 cup Boiling water
2 tbl Lemon juice
5 tbl Olive oil
2 tbl Wine vinegar
2 cl Garlic, minced
2 tsp Thyme, chopped
Instructions:
Instructions: Place the mushrooms in a heatproof bowl. Combine the water and lemon juice and pour over the mushrooms. Let stand for 5 minutes, then drain well. Mix the remaining ingredients and pour over the mushrooms. Cover and refrigerate for at least 2 hours or overnight before serving.

Serves 6 to 8
