Instructions: PARBOIL tapioca until just cooked. Grate coarsely.
Combine grated tapioca, salt, sugar, eggs, baking powder, milk and melted butter in a mixing bowl. Stir well to blend. Sift in flour and stir well to blend. Pour batter onto a slightly greased pan or use a non-stick pan. Cover and cook over medium low heat for 2-3 minutes. When cooked, remove with a palette knife. Serve immediately.
