Ingredients:
Amount Ingredient
75 ml Olive oil, (5tbsp)
1/2 x Lemon, juice of
Finely grated zest of 1 lemon
Salt & freshly ground black pepper
30 ml Capers, drained and roughly chopped (2tbsp)
30 ml Garlic chives, chopped (2tbsp)
4 x Tarakihi steaks, each weighing approximately 175g (6oz)
Instructions:
Instructions: Whisk oil into lemon juice. Add lemon zest, seasoning, capers and chives.

Season fish and pan-fry in butter for 3-4 minutes each side or until thoroughly cooked.

Remove from pan and keep warm.

Warm the lemon dressing in the frying pan and pour over the fish. Serve with couscous.
