Instructions: Rub meat with garlic cloves and lemon or lime juice 30 minutes before cooking. Cover bottom of heavy skillet with 1/2- to 1-inch of half butter and half bacon drippings and heat in a 475 degree oven for 10 minutes. Put meat in hot fat and roast for 25 to 30 minutes, basting every 5 minutes with hot fat. Remove, drain on paper towels, and season.
