1/2 lb	Older small game boned
2 oz	Salt pork
1 sm	Onion chopped
2 x	Celery ribs chopped
1/2 cup	Bread cubes
	(or 1 cup cooked rice)
1 x	Egg beaten
1 tsp	Salt
1/8 tsp	Freshly-ground black pepper
1 dsh	Cayenne pepper
1/2 tsp	Ground sage
1 tsp	Worcestershire sauce

Instructions:

Instructions: Grind game and salt pork fine, add remaining ingredients, and mix well. Pack into a greased 6-cup ring mold and bake at 300 degrees for 1 1/2 hours, or until browned and shrunken somewhat from sides. For highly flavored game, brush top with mix of 1/4 cup catsup and 1/2 teaspoon dry mustard before baking.

This recipe yields 4 to 6 servings.
