Instructions: In 2 tablespoons butter, saute mushrooms. Remove mushrooms and reserve.
Add remaining 2 tablespoons butter to pan and brown chicken breasts sprinkled with Beau Monde seasoning. Place mushrooms on top of chicken breasts and sprinkle with tarragon. Pour the white wine over the chicken. Cover and simmer 25 minutes or until tender. Remove chicken and mushrooms to hot platter. Stir sour cream into pan juices. If desired, thicken with a little cornstarch dissolved in a small amount of cold water. Spoon sauce over chicken and top with green onions. Serve over white rice. Makes 6 servings.
