3 tbl lemon juice
2 tsp dried tarragon
1 sm garlic clove minced
24 med fresh shrimp peeled/deveined about 1/2 pound
1 lb fresh mushrooms sliced in 24 1/2 inch slices
1 tbl water
1 tbl olive oil
1 tbl chopped fresh parsley
1/2 tsp Dijon mustard
Instructions:
Instructions: Combine first 3 ingredients; stir well. Combine half of lemon juice mixture and shrimp in a 9" glass pie plate; toss well. Cover and marinate in refrigerator for 1 hour, stirring occasionally. Combine mushroom slices and remaining lemon juice mixture; toss well. Cover and set mixture aside.

Arrange shrimp spoke-fashion in a single layer with thickest portion towards outside of pie plate. Cover with heavy-duty plastic wrap and vent.

Microwave at High for 2 minutes to 2 minutes and 20 seconds or until shrimp is done, rearranging shrimp and rotating pie plate a half turn after
1 minute. Drain shrimp and reserve marinade. Add water and next 4 ingredients to reserved marinade, stirring with a wire whisk. Add shrimp; toss well. Thread 1 mushroom slice and 1 shrimp onto each of 24 wooden picks.

Yield: 24 appetizers.
