Instructions: The slightly sweet, anise-like flavor of tarragon adds interest and provides an effective foil for the mustard in this light sauce. Drizzle it over steamed asparagus or broccoli, or on pasta with vegetables.
You might like to try this excellent sauce the next time you steam some vegetables. This sauce has a wonderful aroma when drizzled over your favorite steamed veggies. It is a good lowfat substitute for butter. COMBINE GARLIC and stock or water in a small saucepan or skillet. Cover and simmer about 5 minutes. Remove from heat and whisk in mustard, pepper, tarragon and tahini. Bring back to a simmer over low to moderate heat and cook 5 to 10 minutes, whisking often, until mixture reaches desired thickness. Stir in lemon juice, season with salt if desired and remove from heat. Makes about 1 cup. Email this Recipe:
