3 lb beef bottom-round roast
1 med onion chopped
2 x carrots sliced
1/2 cup dry red wine
1/2 cup water
1 tbl minced garlic
1 tbl dried tarragon
Instructions:
Instructions: Preheat the oven to 325 degrees. Coat a roasting pan with nonstick cooking spray and place the roast in the pan.

In a medium bowl, combine the remaining ingredients and pour over the roast. Bake for 1 1/2 to 2 hours, or until the meat is fork-tender.

Slice, and serve topped with the sauce from the pan.

This recipe yields 8 servings.

Serving size: 2 to 3 slices.
