4 x Russet potatoes
1/2 cup onion, chopped
1 x clove garlic, minced
1 lb ground beef
2 tbl oil
16 oz canned tomatoes, drained
6 oz canned tomato paste
12 oz Mexicorn, drained
1/2 cup pimiento-stuffed olives, sliced
1 tsp salt
1 tsp chill powder
Instructions:
Instructions: Peel and slice potatoes about 1/4-inch thick. Overlap half of potato slices in rows, in a 9-inch square buttered casserole. Saute onion, garlic & ground beef in oil. Drain. Add tomatoes, tomato paste, corn, olives and seasonings and mix thoroughly. Spoon over potatoes. Arrange other potatoes over meat. Cover with foil and bake at 350 degrees for 45 minutes. Uncover and sprinkle with cheese. Return to oven and bake an additional 15 minutes.
