Ingredients:

2 cup 5 oz. deveined medium shrimp
1/2 tbl Minced shallots or scallions
2 tbl Brandy
1/2 tsp Freshly grated ginger or 1
2 tbl Minced parsley
4 tsp Grated parmesan cheese
1/4 cup Butter
1 med Clove garlic, mashed
2 tsp Soy sauce
Teaspoon powdered ginger
Instructions:
Instructions: Directions Drain shrimp. Rinse under cold water andthen soak for 10 - 15 minutesin cold water to remove preserving brine. Drain thoroughly and put on paper towels. Heat butter in skillet until it bubbles. Add shallots and garlic, and saute gently until golden. Add shrimp and toss for a minute or two to warm through. Mix in brandy, soy and ginger, along with parsley.

Spoon the shrimp mixture into shells or ovenproof glass individual serving dishes, leaving any juice in pan. Sprinkle each serving with bread crumbs and Parmesan cheese and then dribble pan juices over top.
