2 oz	Tequila, preferably Cuervo Gold
1 sm	White onion, diced
2 tbl	Hot pepper jelly
2 tbl	White wine
1 tbl	Sherry or Champagne vinegar
1 tbl	Fresh cilantro, chopped

Instructions:

Instructions: Mix all the ingredients and let stand for 1 hour. For garnish, use carrot peels and chives.
