1/4 cup prepared mustard
2 x -pound pork tenderloin
1/4 cup vegetable oil
2 x cloves garlic, cut into halves
1/4 cup chopped carrots
1/4 cup chopped celery
1/4 cup lime juice
1/4 cup tequila
2 tsp ground red chiles
1 tsp cumin
1 tsp salt
1 tsp dried oregano
1 tsp dried thyme leaves
1/4 tsp pepper
4 med tomatoes, chopped
1 sm onion, chopped
1 x bay leaf
Instructions:
Instructions: Spread mustard over pork. Heat oil and garlic in skillet until hot. Cook pork in oil over medium heat until brown. Remove garlic. Stir in remaining ingredients except parsley. Heat to boiling; reduce heat. Cover and simmer until pork is done, about 30 minutes. Remove bay leaf. Sprinkle with parsley.
