Amount Ingredient
1 cup cooked chicken shredded
1 cup cooked black beans
2 cup cooked rice
2 cup nonfat cheddar cheese or any flavor
enchilada sauce

2 can tomato paste
2 can water
1 tsp cumin (up to 2 tsp)
2 tsp chili powder (to 1T)
2 tsp onion finely chopped
1 tsp garlic powder
Instructions:
Instructions: In a 9x9 baking dish, layer the ingrediants in this order: enchilada sauce,
beans, chicken, rice, cheese. Repeat. Slosh a little picante sauce around the
top before baking so that your rice doesnt get hard & gross.

Since all of these ingrediants are already cooked, all you need to do is heat
this. I did it last night at 200F for 30 minutes. It might take less, but
thats how long the Simpsons were on.

Combine all ingrediants in a small sauce pan. Boil 1 minute. Simmer til youre
tired of tomato sauce splattering on the stove. (This makes for a strong arguement to fix this in a covered casserole in the microwave.) This is a thick
sauce, so if yours isnt, better grab the sponge & let it simmer some more.

For the black beans, I use garlic, chicken broth, smoke sauce, cilantro

(corriander), salt, pepper, red pepper, onion, & jalepenos (latter diced very
fine). This I cook like any other bean.
