In a small bowl, rub together remaining granulated sugar, flour, cinnamon, pepper, and butter to form fine crumbs, then squeeze into lumps an scatter evenly over apple mixture. Bake in 375 degree oven until apples are tender when pierced and topping is golden brown, 50 to 55 minutes. Serve hot or cool, spooned into bowls and topped with ice cream.
