450 gm best minced steak
4 x spring onions thinly sliced
1 tsp ground coriander
3 tsp red thai curry paste
1/2 tsp salt
1/2 tsp freshly ground black pepper olive or sunflower oil
1 lrg bunch of fresh coriander
Instructions:
Instructions: Mix the steak spring onions coriander curry paste salt and pepper together in a large howl using your hands making sure all the spices are evenly distributed.

Wet your hands and shape the mixture into six evensized flat cakes.

Preheat a ridged grill pan until very hot on the boiling plate.

Brush both sides of the burgers with olive or sunflower oil and fry for 2 1/2 to 3 1/2 minutes each side.

Lift out of the pan as soon as they are cooked (if they stay in the pan they will overcook).

They are lest just pink in the middle.

Serve the burgers on a bed of fresh coriander leaves with some creme fraiche to accompany.

You can also serve 50mm strips of spring onions fried on the grill pan.

This is a wonderful new way to do burgers great for a different summer barbecue but dont overcook them.
