1/4 cup Smooth peanut butter
2 tbl Finely-chopped onion
2 tbl Fresh lemon juice
1/2 tsp Soy sauce
1 x Garlic clove finely chopped
1/2 tsp Dried coriander
1 tsp Tabasco brand Pepper Sauce
2 tbl Finely-chopped parsley
1 lb Boneless skinless chicken breasts cut 1" pieces
Instructions:
Instructions: In a medium bowl, combine first 8 ingredients. Add chicken pieces and toss to coat. Cover and refrigerate 6 to 8 hours or overnight. After marinating, thread chicken on wooden skewers.

Grill or broil 6 to 8 minutes, turning frequently. Do not overcook. Serve warm on skewers.

This recipe yields 30 to 35 pieces.
