Thai Curry Sauce ----------------
1 lrg yellow onion diced
1/4 cup salad oil
3 tbl red curry paste
3 can coconut milk
1/4 cup fish sauce
3/4 cup honey
----------------- Ginger Aioli ----------------
3 x egg yolks
2 x eggs
6 tbl lemon juice
1/3 cup ginger minced
2 tbl garlic minced
2 tbl Sambal
1/2 tbl salt
2 tsp sugar
3 cup peanut oil
----------------- Curry Beef ----------------
1/4 lb beef filet cubed
1 tbl cooking oil
1 tsp salt
3 oz Thai curry sauce
----------------- Assembly ----------------
5 x romaine leaves from the heart
1 oz ginger aioli
1/2 x avocado diced and coated
with lemon juice
1/4 cup cucumber thinly sliced
1 tbl cilantro minced
Instructions:
Instructions: Curry Sauce: Saute the onions in oil together with the curry paste for 10 minutes. Add remaining ingredients and simmer let simmer together for 10 minutes.

Ginger Aioli: Place all ingredients except the oil into a blender or food processor. With the blender or food processor running, slowly drizzle in the oil to emulsify.

Curry Beef: Heat a saute pan until smoking; add the oil then quickly sear the beef for about 30 seconds, seasoning with the salt. Add the curry sauce and reduce until most of the sauce is gone, about 3 minutes.

Assembly: Line a large plate with romaine leaves and spoon the aioli on them. Place some avocado on each leaf and then the beef. Top each with the cucumber, cilantro and red pepper brunois and serve.

Makes 5 lettuce cups.
