Instructions: Over medium heat, heat oil, add lime leaves, powder, and paste, mashing and working until it is smooth (remove lime leaves before serving). Add coconut milk (reserve 1/2 can to be added as needed if sauce is too thick), tamari and sugar. Heat through and begin adding peanut butter spoonfuls at a time.
Add tamarind powder/paste and heat but do not boil, until sauce thickens. Remove from heat. Line Leaves. NOTES : This is a very generous recipe. It would be enough for serving over a lot of rice, or with egg rolls or spring rolls. This is also very good over noodles. For 1 pound of tofu (next), you may want to freeze some of this sauce.
