Instructions: Peel and core pineapple. Cut it into slices and then into 1/2 inch wedges.
Cut shrimp in half down the back. Cut pork into cubes. Combine pineapple, shrimp, pork, peanuts, coconut and coriander in a bowl. Shake vinegar, soy sauce, sesame oil and pepper in a jar. Add peanut oil and shake again. Pour this dressing over pork mixture and toss. Shred lettuce. Put on individual plates and top with pork mixture. Email this Recipe:
