1 lb medium shrimp -- cooked and shelled
1/3 cup fresh lime juice
1/2 tsp salt
2 x cucumbers -- peeled and
----------------- quartered lengthwise seeded ----------------
and sliced
1/2 cup chopped scallions
1 x red bell pepper -- cored and seeded cut into thin
strips
1 oz reduced fat roasted peanuts
1/4 cup reduced fat coconut milk
1/4 cup nonfat yogurt
1/4 tsp hot chili flakes
1/4 cup chopped fresh cilantro
Instructions:
Instructions: In medium bowl, stir together shrimp, lime juice and salt. Refrigerate for 30 minutes. Place cucumber slices in sieve; let drain 15 minutes. Combine shrimp with scallions, red bell pepper and peanuts. Stir to combine. Mix coconut milk, yogurt and chili flakes in small bowl. Pour over shrimp mixture and stir; add cilantro and refrigerate. Divide greens between 4 plates and top with equally divided shrimp salad.

Serving (3/4 cup greens with 1 3/4 cup shrimp salad) provides: 1 fat, 1 1/2
