Instructions: In medium bowl, stir together shrimp, lime juice and salt. Refrigerate for 30 minutes. Place cucumber slices in sieve; let drain 15 minutes. Combine shrimp with scallions, red bell pepper and peanuts. Stir to combine. Mix coconut milk, yogurt and chili flakes in small bowl. Pour over shrimp mixture and stir; add cilantro and refrigerate. Divide greens between 4 plates and top with equally divided shrimp salad.
