Instructions: DEBONE the fish and cut into chunky pieces before blending to a paste in a food processor. Add in all the other ingredients and stir to mix well.
Wet your hands and divide fish mixture into eight pieces. Form a ball with the fish mixture and press down firmly to flatten. Deep-fry in hot oil. Drain and serve with dipping sauce. To make the curry mayonnaise sauce, combine all the ingredients in a mixing bowl. Mix well. Chill in the refrigerator for 1/2 to 1 hourto balance the flavours. Transfer to a sauce bowl and serve.
