Instructions: Soak unflavored gelatin in the l/4 cup cold water for 5 minutes. Drain pineapple and add enough water to syrup to make 1-1/2 cups. Heat. Pour over orange gelatin. Add unflavored gelatin. Stir until both are dissolved. Cool. Add pineapple, applesauce, cranberry sauce, and orange rind, and mix until well blended. Add celery and and chill till firm.
[The original recipe called for 1/4 c. of sugar to be added with the fruit, but it really isnt necessary and my mother never does. If you want to make this sugar free just add 1 additional package of unflavored gelatin and use sugar-free jello] NOTES : This cranberry jello salad is one of our familys traditional recipes and it wouldnt be Thanksgiving without it.
