Ingredients:
Amount Ingredient
1 lb Chopped yellow squash (about 4 small)
1 x Onion, chopped
3 tbl Butter or margerine
2 x Beaten eggs
1/2 cup Shredded cheddar (I use more...we like the cheesy taste)
1 tsp Salt
1 cup Milk
1 cup Cracker crumbs (saltines)
Instructions:
Instructions: Preheat oven to 375 degrees. Combine squash, onion, and butter in a skillet. Saute until squash is tender, then coarsely mash with a fork. Add Remaining ingredients. Pour into a greased casserole dish. Bake at 375 degrees until a knife inserted near the center comes out clean. Let sit 5 minutes before serving.
