Instructions: Heat oven to 375 degrees. In skillet, melt 1 tablespoon butter. Saute onion over medium heat until softened and translucent; set aside. In medium bowl, mix together crumbled goat cheese or cream cheese, grated mozzarella cheese, basil, oregano and freshly ground pepper; reserve. Stack filo dough; cut into 4 strips lengthwise and 4 squares crosswise, making 16 squares. Brush 16 mini muffin cups with melted butter. Place 1 square filo in each cup, pressing into bottom of pan, allowing edges to overhang; brush bottom and edges with melted butter. Bake at 375 degrees 3-5 minutes or until golden brown; remove from pan. Divide cheese filling evenly among warm filo cups; top with reserved onions and tomato (seeded and diced). Sprinkle with grated Parmesan cheese and serve.
