1/2 cup Whole wheat flour
3/4 cup Plus 2 tablespoons oat bran
1/2 cup Whole grain cornmeal
1/3 cup Brown sugar
1/2 tsp Baking soda
3/4 cup Prune juice
1 cup Nonfat buttermilk
1 x Egg white or 3tablespoons
Egg substitute
1 tsp Vanilla extract
1/2 cup Chopped dark raisins or
Instructions:
Instructions: Combine first 5 ingredients. Stir to mix well. Add the remaining ingredients, and stir until the dry ingredients are moistened.

Coat muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Bake at 350F for about 18 minutes, or until wooden toothpick inserted in the center of a muffin comes out clean.

Remove the muffin tin from the oven, and allow it to sit for 5 minutes.
