Instructions: * Note: Charantais is a yellow-fleshed French cousin of the cantaloupe.
Cut each melon in half lengthwise. Scoop out seeds with a wooden spoon, taking care not to bruise the flesh. Cut each half lengthwise into six slices. Using a sharp knife, remove the peel. Slice figs crosswise into 1/4-inch thick slices. Cut limes into wedges. Arrange melon slices on a large platter, and cover with prosciutto. Garnish with figs and lime wedges.
