Instructions: Beat 3 egg whites until peaks form; set aside. Whip 3 egg yolks with 1/4 cup sugar. Add mascarpone cheese and blend. Fold in egg white mixture.
Prepare graham cracker crumbs according to package directions. Fill par- fait glass with alternate layers of crumbs and mascarpone to top of glass. Refrigerate. Optional: dust with cocoa powder. Place 1 - 2 wafer cookies on top of parfait at time of serving. Email this Recipe:
