12 lrg slices goodquality white bread buttered
2 x heaped teaspoons tomato chilli relish
50 gm Gruyere finely grated
1/2 sm onion peeled and sliced into thin rings
4 oz butter melted
25 gm Parmesan (Parmigiano Leggiano) finely grated
Instructions:
Instructions: Preheat the grill to its highest setting.

Spread both slices of bread with a heaped teaspoon of relish each.

Sprinkle the Gruyere on one of the slices then sprinkle the onion rings over season with salt and pepper and then place the other piece of bread on top.

Brush the top of the sandwich with half the melted butter and sprinkle over half the Parmesan lightly pressing it down.

Place the sandwich on the grill rack and grill it 50mm from the heat until the top of the sandwich is golden brown about 2 minutes. Then turn the sandwich over and brush the top with the rest of the melted butter and Parmesan then return the sandwich to the grill for another 2 minutes. Finally cut it into quarters and eat it pretty quickly.

This is the vegetarian version of Crogue Monsieur. You can use the readymade relish normally served with burgers or red onion tomato and chilli relish (qv)
