Ingredients:
Amount Ingredient
3/4 cup soft (silken) tofu
1 cup sugar
1/4 cup oil
1 tsp vanilla extract
2 lrg ripe bananas
1/3 cup all purpose unbleached flour
2/3 whl wheat flour
1/3 cup oats
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
Instructions:
Instructions: Preheat oven to 350 degrees F.

Blend the tofu in a blender until smooth and creamy. Pour into a mixing bowl and beat in the next ingredients. Mix together the next ingredients in another bowl.

Beat everything together, then add the chopped nuts, if using.

Pour into an oiled loaf pan. Bake for about an hour. Let cool in pan for a while before removing, then refrigerate. It holds together better once its cold.

NOTES : This is for my friends who like Healthy Alternative foods..

I added Cinnamon, Nutmeg, Ginger, all freshly ground spices.. almond Extract and Vanilla Too..and in fact Raisins, and Coconut..

A Nutritionist Friend of My Sisters said that I could have left out an egg and 1/2 the oil and added Apple Sauce in that proportion of the deleted items to make it even lower in
