Instructions: Preheat oven to 350 degrees F.
Blend the tofu in a blender until smooth and creamy. Pour into a mixing bowl and beat in the next ingredients. Mix together the next ingredients in another bowl. Beat everything together, then add the chopped nuts, if using. Pour into an oiled loaf pan. Bake for about an hour. Let cool in pan for a while before removing, then refrigerate. It holds together better once its cold. 12 slices per loaf NOTES : This is for my friends who like Healthy Alternative foods.. I added Cinnamon, Nutmeg, Ginger, all freshly ground spices.. almond Extract and Vanilla Too..and in fact Raisins, and Coconut..
