Ingredients:
Amount Ingredient
1 tbl vegetable oil
1 lrg white onions, chopped
1 sm red bell pepper, chopped
1 sm green bell pepper, chopped
1 x 10 oz pkg frozen corn, defrosted
2 cup vegetable stock
4 med red potatoes, diced
1/2 cup soy milk
1/2 lb firm tofu, cubed
1 tsp salt
1/2 tsp black pepper
Instructions:
Instructions: Heat oil in medium saucepan over high heat and saute onion, peppers and corn until onions are translucent, about 5 minutes. Add vegetable stock and potatoes and bring to a boil. Reduce heat to simmer and cook for 15 minutes.

Add soy milk and tofu and simemr another 15 minutes. Season with slat and pepper. Serve immediately, garnished with parsley.
